Get out your dehydrator.
Raw Cauliflower Popcorn (recipe found here)

cauliflower, broken into florets, bite sized
quality olive oil
Put all the cauliflower florets in a plastic bag. Add the remaining ingredients and shake it up. You want it evenly and thoroughly distributed and each piece well coated. Spread on dehydrator trays. Or eat as is.
When it’s finished in the dehydrator, it shrinks down by at least half. And it’s quite strong – the salt and oil tastes are pronounced, so I’d add less than it tastes like it needs next time I make it. Which will be as soon as cauliflowers go on sale. Then I’ll buy 3.
